Ok, confession time: I'm pretty slack.
Although I have a feeling that's not really a secret - for those of you that read this blog you have probably already noticed it's not exactly updated that regularly... And I think that a part of that may be because I'm currently in the 'cookies' section of the book and neither myself or Chris are really that into eating cookies. Unless they are 90% chocolate chips. Or Tim Tams. Give us cake and ice cream any day.
So. I've decided to skip a few recipes... oh man I feel bad just typing that. What kind of domestic goddess doesn't like making cookies?!
Anywho. This recipe is one of the last cookie recipes. Well, that I'm making anyway. I'm skipping out some of the plainer looking recipes and only baking delicious sounding ones like Snickerdoodles (I know, right?). There is no picture for this recipe, but the image that came to mind after reading the title was of Peanut Brownies. There is no cocoa or chocolate in this one though, so I had to amend my mental image to this: Blonde Peanut Brownies! Yummo.

There were a couple of ingredients that were kinda hard to find at my local - like vegetable shortening and roasted, salted peanuts. Really Woolworths? Do people not bake in this suburb or something? I always have trouble finding seemingly basic ingredients. Like icing sugar. Seriously. I did eventually find vege shortening, but I gave up and ended up just roasting my own peanuts, which is admittedly something I have had trouble with in the past (recap: my attention span while things are in the oven: not so great).

What the what?!

Something that is not that hard to find: awesome retro kitchen tools at my local op shops! This cute sifter I found says "Use one had to sift while the other mixes". Gold. Thanks Mr. Sift-It!
All in all though, basic recipe, basic ingredients, basic method. It was so easy to make these that my Dad could have done it. And the extent of his kitchen experience is generally steak, potatoes, brocolli... you get the idea. Man-food. Oh, and I had a genius idea.. I ended up using the timer on my phone to remember to take them out of the oven on time. They were cooked perfectly! Go me! (Maybe I should have added 'egg-timer' to my op-shop list long long ago...)
The end result? Pretty much as I predicted: Blonde Peanut Brownies. They are sweet, they are salty, they are delicious. Especially with freshly brewed peppermint tea. In fact, that is exactly what I am enjoying as I type this - what a nice way to spend a lazy Sunday afternoon.
