Recipe #25: Pistachio Macaroons


You know when you are flicking through a recipe book and suddenly you come across a recipe that makes you NEED that book...? Well for me, it was that photo above. I have been absolutely dying to make this recipe ever since I started my quest to become a domestic(kitchen) goddess, let's just hope I can do it justice!


This recipe uses loooooaaaads and loads of pistachio nuts, in both the macaroon as well as the butter for the middle, and the recipe requires you to 'Process until as fine as dust'..
*Snort*, yeah I'm sure me and my mortar & pestle will be all over that. I have the feeling my macaroons are going to be slightly more textured than Nigella's. I didn't do too badly though, it just took a lot of elbow grease, and a really heavy pestle(?).. Wait, is that the crushing bit or the bowl bit? I never know...

Oh yeah, thats right. No more beating by hand for me baby. Woop woop! It is so amazing having an electric beater. An arduous 20 min workout now has become a quick 2 min blitz... Joy! My tired pistachio-crushing-arm thanked me a LOT. From here, once the meringue is all whipped up, you basically just add the nuts and voila: Pistachio fluff!




When it came to putting these little meringues in the oven, I was so adamant that I was not going to burn them that I gave Chris strict instructions not to distract me, and then plopped myself down on the kitchen floor and watched them the whole time. Uh-huh, it's true. And as you can see I succeeded in saving them from burning and they actually look edible before any added sugar/fillings/icings/disguises! In fact, I may have even taken them out a wee bit soon as they fell a little bit when I took them out and they stayed quite soft and chewy instead of going crunchy. Still, I'd much rather prefer that to charcoal!


They did taste AMAZING though, soft or not, as they were filled with the most delicious pistachio-butter-icing I have ever tasted in my life. They were also amazingly sweet, just one of these babies gave me a big enough sugar rush to keep me going 8-hours straight at work. Even Chris could only manage 2 in his lunchbox! And his verdict...: 5/5. Oh yeah.
