Flora's Famous Zucchini Cake: Revisited

We recently returned from a 2 week trip back home to NZ to visit family & friends, and before we left I was scouring the fridge for things that needed using up. Funnily enough, two of the items were zucchinis and limes, so I decided I would revisit a previous fave of ours - Flora's Famous Zucchini Cake.

The biggest difference this time round: I baked two cakes instead of just slicing one in half, meaning the lime curd didn't soak into the cut surface and completely disappear... otherwise it was just as delicious as the first time round and I will definitely be revisiting this one again and again. Yummo!
