Recipe #6: Victoria Sponge

I'm finally onto Chapter 2, and it's a pretty exciting one: Filled and Iced Cakes. Joy!

about everything going on in this picture!

The first recipe in said chaper is Victoria Sponge, and it looks oh-so-delicious. It was unbelievably easy to make too - all I had to do was add all ingredients to the food processer and push go for an instant cake mix. Woohoo! Food processors make for a very tedious cleanup though... but I think the end result justifies the need for more dishes. The only thing I didn't really do properly was to use two cake pans - I got lazy and used one, hoping that I would easily be able to slice the cake in half and fill with yummy things.


But somewhere along the line my sponge decided that it didn't want to rise. In fact I think it quite liked resembling a giant pikelet thank-you-very-much. (It even smelled like pikelets - I had to resist from taking a huge bite out of one half before filling it). Or maybe I just took it out of the oven too soon and hence stopped my sponge mid-rise... who knows. Not me.

To redeem this cake from a sure 1/5 though was Grandma Jacquie's homegrown raspberries and homemade Berry Delight jam, with a whole lot of cream to top it off!
